A birthday cake of a baker's son ~


"What kind of cake do you want for your birthday?", said me.

"I waaaannnt..........a chocolate cake, with vanilla buttercream, coconut all over and chocolate ganache drizzled on top.", said pending 12 year old Nicholas.

Wow. I didn't see that one coming. Should have...since my ten year old asked for a coconut cake with strawberry filling and plain buttercream.

The above picture....the last slice...always in the possession of the birthday child. It was one delicious cake!

Have I mentioned I love baking cakes?

Watermelon juice *Ahhhh*



Watermelon of my dreams! Seeded!!

First things first.

Simple syrup ~

1/2 c. sugar
1/2 c. water

Heat ov
er low, swirl pot now and then to dissolve the sugar. No need to bring to a boil. Do let it cool.




7 cups watermelon, seeded and whirred up in a blender, then put through a strainer.
3 c. water - more or less to taste, start with less

Add as much simple syrup as you desire. Taste as you go along. Brighten it up with some lemon juice. Chill and serve over ice.

Yummers! Perfect for lake day....which is tomorrow.
